NOURISH: Restaurant Style Salsa

This restaurant hack is my attempt at replicating the delicious, fresh-tasting salsa found at Delicado’s Deli, and similarily at Gina’s Mexican Cafe, both located in Nanaimo, BC. I know these restaurants add some spices to their salsa, but I’ve come to like this recipe without.

I would buy large containers of this salsa from Delicado’s when I lived in Nanaimo and I was a frequent customer of Gina’s Mexican Cafe, so when I moved away (several years ago), I was determined to figure out how to make it myself. It took me years to perfect, and then one day, about a year ago, I figured out the key ingredient that I had wrong! I was using fresh, unpeeled Roma tomatoes instead of canned, peeled tomatoes! Of course, it’s the canned tomatoes that make all the difference in taste and texture!

This recipe doesn’t include a heat component because I’m a heat wimp! So, add chilli flakes or pepper powder to make this the right heat level for you.

Restaurant Style Salsa

{ 1 litre | 5 min prep }

  • 1 can Whole, Peeled Roma Tomatoes (drained)

  • 1/2 White Onion

  • 1 Carrot

  • 2 cloves Garlic

  • Juice of 1 Lime

  • 1/2 bunch of Cilantro

  • Salt to taste

INSTRUCTIONS:

  1. Gather and prepare ingredients.

  2. Place onion, carrot, and garlic in a food processor and pulse until chunky.

  3. Add canned tomatoes, cilantro, lime juice, and salt, and pulse until desired texture.


TIPS:

  • Only use the whole tomatoes, and set aside the sauce from the can.

  • Serve with Tostitos Hint of Lime chips.
